Corn & Raw Mango Salad

This colourful, healthy, and filling salad is rich in Vitamin C, beta carotenes and fibre.

Ingredients:

  • Raw mango – 1, big (preferably a Totapuri or Banganpally mango)
  • Sweet corn – 200g
  • Bell pepper (any colour) – 1, medium sized
  • Tomato – 1, small
  • Onion – 1, medium sized
  • Pepper powder – 2 tsp
  • Oregano – 1 tsp
  • Salt – as per taste

Method:

  • Finely chop the mango, bell pepper, tomato, and onion.
  • Boil the sweet corn with two teaspoons of salt. Drain the water and set the corn aside.
  • To a big bowl, add the finely chopped mango, bell pepper, onion, and boiled sweet corn.
  • Add the pepper powder, oregano, and salt.
  • Give it a good mix and enjoy!

As we become more aware of our eating habits we may take steps towards behavior changes that will benefit ourselves and our environment.

It is about elevating your mindfulness to reach a state of full attention to your experiences, cravings and physical cues when eating.

A few tips to inculcate your sense of mindful eating:

  • Eat without distractions. 
  • Don’t skip your meals.
  • Eat slowly to avoid overeating. 
  • Limit yourself to one modest helping at meals. 
  • Look out for cravings (Non-hunger triggers).
  • Snack healthy – Avoid high fat or high sugar snacks.
  • Do not eat after dinner.
  • Stop binge eating.
  • Buy fresh & seasonal foods than any preserved food.
  • Always keep yourself well hydrated.
  • Appreciate, honor & savor your food.
